As the Director of Process for Apicii, Brianne Harvey coordinates with the operations teams to develop effective and efficient restaurant processes, focusing on daily technology and systems. She also manages vendor relationships with all of Apicii’s technology partners and works with them to ensure the best-in-class systems are implemented across all properties. 

What drew her to Apicii was the diverse group of hospitality establishments and how all projects are unique. Thriving off work that is both exciting and challenging, Brianne also loves the people she works with at Apicii because she feels like she’s constantly learning from her colleagues.

Brianne’s expertise and background are specifically in restaurant operations, with broad experience that culminated in being the assistant manager and event coordinator at Grande Colonial and corporate trainer and manager at Ruth’s Hospitality Group Inc until becoming the Director of Events and Catering at Dosa. After a decade in operations, Brianne transitioned to the technology side of the restaurant. She applied her knowledge to help thousands of restaurants — from casual to fine dining concepts — increase their performance, assisting organizations in implementing best-in-class systems to solve operating problems. She became a consultant at OpenTable, where she worked with thousands of restaurants and learned how varying operations are depending on the concept, clientele, and staff. She attributes this experience to opening her eyes to the possibilities and the importance of having the right systems in place as an organization.

Before finally joining Apicii, Brianne owned and founded a restaurant IT consulting company in 2012 called Break Bread Consulting, which serves major brands across the country, including Cameron Mitchell Restaurants, Jose Andres Think Food Group, Hudson Group and more. Her consulting firm focuses on outsourced system implementation and digital strategy consulting. She also owns Restaurant Resource, a tool for people in the restaurant industry to source vendors and connect with other industry professionals worldwide. This product is currently in beta testing and will launch in 2023.

Brianne says she always had a knack for technology and was often tasked with technical tasks during her days in restaurant management. She enjoys the dichotomy of restaurants being a people-oriented industry with many variables and IT systems being bound by rules. 

Brianne currently resides in Kansas City, MO, with her husband and new baby girl, who has been keeping her very busy, along with their two dogs and two cats. She finds herself incredibly lucky to have a chef as a husband because he always makes incredible dishes. While she loves eating his pork green chili, she also enjoys baking whenever she gets a chance and can often be found making chocolate cookies or peach cobbler.

  • Restaurant Specialist at OpenTable where she served as the founding member of the flex conversion team to assist in the transition from slot to flex software.

  • Founder and owner of Break Bread Consulting, an information technology agency that serves major brands across the country with outsourced system implementation and digital strategy consulting.
