APICII is a hospitality company that develops, owns and operates a collection of restaurants, bars, private clubs, event and entertainment venues. Partners Tom Dillon and Bernard Schwartz bring decades of hospitality experience as owners, operators and developers of successful food, beverage and entertainment venues in United States, Mexico, and The Middle East.

Headquartered in New York's Greenwich Village, APICII has offices in Los Angeles and is working on projections throughout North America; from New York to Los Angeles, Nashville, Portland, OR, Atlanta, Mexico City, Cabo San Lucas, and Playa del Mar.

Notable Developments

APICII collaborates on some of the most important lifestyle and luxury developments in North America. We develop bespoke food and beverage concepts to fit each property. 

Apicii is opening all the food and beverage in the historic Hotel Figueroa in Downtown Los Angeles, The two restaurants and three bars will open as part of the historic renovation of the property. Opening in late summer 2017, the property will be a part of The Leading Hotels of The World and will set a new benchmark in lifestyle luxury hotels.

In collaboration with food network star Chef Geoffrey Zakarian and Montage Hotels and Resorts, APICII developed the concept for Georgie Restaurant and The Garden Bar in the Montage Beverly Hills.

In collaboration with with the owners of The Setai Miami Beach, APICII developed new restaurants and bar concepts at South Beach's finest resort. The property includes a signature restaurant and grille, courtyard lounge, pool and beach bar, beachside food truck, and programming and activation of over 45,000 SF of event space.

Apicii is collaborating on the restaurants, bars, lounges and rooftop restaurant totaling more than 20,000 square feet at the forthcoming Downtown LA Proper Hotel.

The project is a partnership with The Kor Group, Frank Stork and Channing Henry.  The partnership is working with interior design firm, Kelley Wearstler Design Studio, to convert the 90 year old property into a boutique hotel under the Proper Hotels brand.

Apicii collaborated as part of the due diligence and underwriting process to  evaluate the third party F&B operators for the Beekman Hotel and Condominium.

The 10-story landmark building from the 1880s and adjacent 51-story condo, is being converted into a luxury 287-room Thompson Hotel with 68 residences. James Beard winning restaurateur Keith McNally of famed institutions Balthazar and Pastis together with James Beard winner and Craft Hospitality chef/ower Tom Colicchio will be operating the restaurants.

Apicii collaborated on the reconcepting of the signature restaurant, bar and lounge at The Ritz-Carlton, Philadelphia. 

The Ritz-Carlton, Philadelphia is a spectacular landmark building in the heart of Philadelphia's downtown business district. The property has 300 guest rooms and more than 26,000 square feet of event space.

Apicii is collaborating on a restaurant, cocktail lounge and rooftop bar as part of the $65 million rennovation of the former James Robertson Hotel. Located in the heart of Downtown Nashville, the 190 boutique lifestyle hotel will reopen in 2017.

Apicii is collaborating on a new restaurant and lounge at The Ritz Carlton Coconut Grove in Miami. 

Built in 2002, The Ritz-Carlton Coconut Grove is a AAA 5-Diamond luxury boutique hotel located in the heart of Coconut Grove, Miami's historic bayfront neighborhood. Inspired by the Italianate style of Villa Viscaya, this luxurious Ritz-Carlton includes 19,000 square feet of meeting space, an award winning lounge, a signature restaurant and full service spa.

Apicii collaborated with Montage Hotels and Ohana to conceive and launch new concepts for the five restaurants, bars and lounges totaling more than 50,000 at at the ultra-luxury Montage Deer Valley. 

The luxury, ski-in ski-out, Deer Valley resort features 221 guest rooms and residences and is one of North America's finest mountain resorts.

The 40-story St Regis San Francisco opened in 2005. Designed by Skidmore Owings and Merrill, the property includes 100 branded residences rising 19 floors above a 260-room hotel. The San Francisco institution is located in the city's SoMa district.

Apicii was sought out as part of the underwriting process to evaluate the banqueting operations and deal terms for the highly regarded Cipriani catering operations at 42nd Street (14,000 SF) and Wall Street (18,000 SF) in New York.
