Engaged by Elliot Management to perform F&B advisory services at the Beekman Hotel. The ten-story landmark building from the 1880s, and adjacent 51-story condo, is a luxury 287-room Thompson Hotel with 68 residences. Apicii carried out a due diligence and underwriting process to evaluate potential third-party F&B operators, concepts, pro formas, and deal terms, including the James Beard Award-winning restaurateur Keith McNally, of famed institutions Balthazar and Pastis, and the James Beard Award winner and Crafted Hospitality chef/owner Tom Colicchio.
