Carson Schroeder has been with the APICII team since 2015 and serves as Chief Development Officer. In his role, he leads the new business development, underwriting and transactional functions of APICII. He plays an integral part in the success of developing restaurants, bars and private clubs in New York, Los Angeles, Miami, Washington D.C., Philadelphia and more locations nationally as well as in international markets such as London, Dubai and Hong Kong. 

Prior to APICII, Carson spent seven years in leadership roles at Culinary Concepts by Jean-Georges (CCJG), a joint venture restaurant company between Chef Jean-Georges Vongerichten, Starwood Hotels & Resorts, and Catterton Partners. In his role with CCJG, Carson’s responsibilities included sourcing, negotiating, underwriting, transacting and leading the company’s new business ventures. During that time, Carson has worked on developing and structuring more than 100 hospitality projects globally and continues to bring his extensive international experience to his work today. The experience helped him develop a deep understanding of third-party restaurant operations in hotel environments and how to navigate the overlapping or contrasting priorities of each party – the owner, the hotel operator, and the Food & Beverage operator

He started his career in investment banking, which he said felt like an immersive way to enter the business world and gain experience with different types of industries, transactions and analytical skill sets.  He moved into the hospitality industry with Starwood Hotels after gaining experience and skills that would be applicable to strategic growth, mergers and acquisitions.  He always was passionate about food, cooking, restaurants and the dynamism of the Food and Beverage world, but it was not an industry he specifically pursued. But when the opportunity to help form Culinary Concepts fell into his lap at Starwood, he was excited to jump at the opportunity. Ever since, he has enjoyed the opportunity to marry his analytical and dealmaking skills with the more creative elements of the restaurant business.

Carson currently resides in New York City where he enjoys living above his favorite Michelin-starred Spanish restaurant. When he’s not hard at work developing the ever-growing world of APICII, he enjoys traveling, cooking, eating and drinking, and exercising. He especially enjoys exploring new cities and locations during a jog.
